Hurricane Cake Recipe
I’ve been seeing recipes lately for Hurricane Cake and have been intrigued, and wondering just what the difference between Hurricane Cake and the popular Earthquake Cake, so I tried it. Although the ingredients are essentially the same, Hurricane Cake doesn’t end up with peaks and valleys in the finished cake and is smooth on the top. I guess Hurricanes don’t do the same type of damage to the land as earthquakes do. This Hurricane Cake features a gooey coconut pecan layer on the bottom, covered by a layer of moist cake topped with a cream cheese topping and more cake. Yum!

This is easy and starts out with a cake mix. Most of the ingredients are probably either in your fridge or on your pantry shelf. This cake stays fresh for several days If kept airtight. It is also good enough for company – just sprinkle each piece with a bit of powdered sugar to dress it up.

1 cup butter, (2 sticks), divided
1 cup flaked coconut
1 cup chopped pecans

1 13.25 ounce devil's food cake mix
1 cup water
1/2 cup vegetable oil
3 eggs

1 8 oz. package softened cream cheese
3 1/2 cups powdered sugar

  1. Preheat oven to 350°. Spray a 9" x 13" shallow glass baking dish with non-stick spray.
  2. Melt 1 stick of butter and pour it in the bottom of the baking dish. Sprinkle the coconut and pecans over the butter.
  3. In a large mixing bowl, mix the cake mix, water, vegetable oil and eggs until smooth. Pour half of the mixture over the coconut/pecan mixture.
  4. Place the remaining stick of butter along with the cream cheese in a microwave safe bowl. Microwave 1-1 1/2 minutes or until the butter is melted. Stir to combine; mix in the powdered sugar until smooth.
  5. Spread the mixture over the cake batter in the baking dish; pour the remaining cake batter over the cream cheese mixture.
  6. Bake 35-40 minutes or until a toothpick comes out clean and the cake begins to leave the sides. Cool thoroughly before cutting into squares.
